Banana and Coconut Nutri-Brex Loaf

  • 2 Coconut and Crispy Rice Nutri-Brex biscuits, crushed
  • 300ml almond milk
  • 1-2 banana, mashed (100g banana flesh) + 1 for decoration
  • 3 medium eggs, beaten
  • 120g brown rice flour
  • 120g sorghum flour
  • 50g tapioca flour
  • 75g high muscovado sugar
  • 60g sultanas
  • 40g desiccated coconut
  • 1 tsp cinnamon
  • 1/2 tsp baking powder

Method


  1. Preheat oven to 170°C, then grease and line a 2lb loaf tin.
  2. Place the Nutri-Brex in a bowl, and pour over the almond milk. Mash with a fork until disintegrated, then add the mashed banana and egg.
  3. In a separate bowl combine all the brown rice, sorghum and tapioca flours, then the rest of the ingredients and add these to the wet Nutri-Brex mix. Stir well, then pour into the loaf tin, and smooth over.  Split the extra banana in half then push into the top of the loaf.
  4. Bake in the oven for 90 minutes, until browned on top and a knife comes out clean. You may need to cover the loaf with baking parchment half way to stop the top burning.
